Need a quick breakfast on the go? These sweet potato breakfast wraps are easy to make ahead of time and store. Stick them in the freezer, then grab one and heat it up quickly when you’re running short on time.

Sweet Potato Breakfast Wraps

  • 1 sweet potato (skin on), shredded or diced
  • 3 large eggs
  • 6 whole wheat tortillas
  • 8 oz turkey sausage
  • 1 cup sharp cheddar cheese
  • 2 tbsp canola oil
  • 1/4 cup chopped onions
  • salt and pepper
  1. Heat oil in pan over medium heat
  2. Add shredded or diced sweet potato and onion to pan, cook until brown and crispy
  3. In a separate pan, brown turkey sausage
  4. Add eggs to browned turkey sausage and scramble until fully cooked
  5. Add salt and pepper to taste
  6. Mix together sweet potato, eggs, turkey, and cheese
  7. Divide mixture evenly between 6 tortillas
  8. Roll tortillas up and place on greased baking pan
  9. Bake at 400 F for 10 minutes or until crispy
